Okay, since we all eating ice cream that has sugar - I thought I'd share Comet's peanut butter cookies that she loves!  They are a tad bit healthier than regular cookies and they are so easy!

For us older folks, you may remember this recipe from a long time ago.  It actually originated from Laura Scutter's (peanut butter maker).

1 large egg

3/4 cup of sugar

1 cup of peanut butter  (creamy is better)

Mix egg and sugar until creamed  first – then mix in peanut butter.   Roll into balls and flatten with fork or bottom of glass.  Cook for 10 minutes at 400 degrees.  (1 minute less if it's a dark cookie sheet)

Done.  It's so easy!  And to me, so much better than regular peanut butter cookies.  The old recipe called for 1 cup of sugar but I think they are too sweet.  They are almost like the insides of a Reese's peanut butter cup but look just like a peanut butter cookie.

We make these all the time around here and Comet waits in the kitchen until they are ready.  She can't understand why she can't have one as soon as they come out of the oven!

Tip:  For humans – add a Hersey's Kiss on top immediately after they have cooked. YUM!

Yum!

Ok, my Mom is ultra paranoid about sugar. What if you replaced the sugar with Agave Nectar? Or honey? Perhaps added just a bit of something like rice flour to give them form.

We might have to play around with that. This is a great idea, thanks!

ok, i'm just sayin'...isn't putting these under 'healthy eating' a wee bit of a stretch....they sound delicious - but then can we conclude that a follow-up chocolate malted would be an energy drink????  it's after 5, i think i'll go up and talk to dr. bud about this healthy stuff..........

Bwahahahaha!  Yes!  There wasn't a plain "Eating" category!

No wonder Rene is so darned skinny!   I don't know anything about Agave nectar - but hey - if it has sugar texture - it should work!  Just don't use any Equal or whatever that other one is for the pooches.

Someone was just asking in the twitterverse if Agave is OK for dogs, so look into that one! Our guess is it would be to viscous for this recipe though.

We may not have an "Eating" forum, but haven;t you heard? Anything goes now.

Skinny? Uh huh, sure.

So about Agave, here's what the poo-poo Dogster crowd has to say about it. Must be a bunch of vegans or raw foodies.

I say, nobody "needs" sweetener, but it sure makes things taste good!
